We sat down with Vicki to learn more about what makes Two Chicks & A Rooster special, how they handle the unexpected, and why their fun name perfectly captures their philosophy.

What inspired you to start Two Chicks & A Rooster Catering?
We’ve always loved to give parties, feed, and serve people. At the time of our 3rd child’s birth, I decided not to go back into the corporate world. However, we still needed to earn a living. We started slowly, catering for family and friends, and things just grew from there.
What types of events do you most frequently cater? Which are your favorites, and why?
Weddings and corporate. I love it all. I love serving people and seeing them enjoy the food that my husband and his staff prepare.
What makes your catering service different from others in the area?
I feel that we really put our heart into it. My heart is to serve and my staff knows that and they reflect that to our guests. We also try to provide everything from “soup to nuts” with our service.

Can you share a situation where you had to adapt on the fly and what you learned from it?
At one wedding, years ago, we were cooking on site. My husband loaded the hotbox with the cooked entrees. I went to carry the hotbox, by the side handles, to the buffet.
It proceeded to break apart and I watched as all of our entrees hit the pavement. Ugh!
I learned that day to carry those boxes from the bottom. I also learned that how you handle the situation with the client speaks volumes.
Our B&G that day were the most gracious. We offered to order pizza and we still had the rest of the food on the buffet. In the end, all was good, and the B&G posted a very nice review for us.
You offer everything from setup/tear-down to site visits, rental coordination, decor, bartending, etc. Which part of the service do clients most overlook but which makes a big difference?
They typically get surprised with the extent of what we do and that we don’t add extra costs for things like busing the tables.
How do you coordinate with vendors to ensure everything blends smoothly?
COMMUNICATION.

What’s been your most memorable event to date, and what made it special?
It’s tough to pinpoint just one, but we were called by a large wine company to do their annual sales dinners a few years ago.
We took care of all of the rental coordination (tables/chairs/linens/plateware/glassware, etc) through clean up for 350 guests on a Monday and Wednesday evening at two separate venues.
These were some swanky folks, and my staff knocked it out of the park. I was very proud and humbled by it all.
What should clients look for when hiring a caterer?
Good communication and no “hidden” charges.
Tell us about Catering for a Cause. What are some recent causes you have supported?
We’ve always tried to donate/give back. A few years back one of my employees came up with the slogan “#cateringforacause”. We started out with quarterly donations to various charities, blogging along the way.
Now, with my lack of writing skills, I’m lucky if I blog once a year, but we definitely still donate to multiple charities throughout the year.
Some of our recipients include Kidspire, The Father’s Heart Street Ministry, Bloomin’ Boutique, Clackamas County Emergency Services, and Teen Challenge.
Outside of work, what inspires you creatively?
We love to travel! We are big “cruisers”.
